Cucumber & Tomato Salad

1 cup cherry/grape tomatoes halved (quartered if they're big)
1/2 english cucumber sliced thin
1/2 small red onion (I hate raw onion so I omitted this, but was thinking some scallions would be nice)
juice of 1/2 small lemon
1 teaspoon EVOO
Salt and pepper to taste

Add all ingredients to bowl, toss and let sit for a few hours to let the flavors marry. A few teaspoons of feta cheese would also taste yummy (taking it more towards a greek salad) but also bumps up the calories quite a bit. If you add feta, omit the salt.

Stuffed Peppers

4 bell peppers (I used red but you can use any color)
1 roll of Jennie-O turkey breakfast sausage
1 6oz box of Uncle Ben's long grain and wild rice (cooked according to package directions MINUS seasoning)
2 ribs celery
1/2 large onion
salt, pepper and garlic powder to taste
1oz light cheddar cheese

Cut the tops off peppers (just enough to get the seeds and ribs out) and hollow peppers out. Place in a baking dish sprayed lightly with Pam cooking spray. Cook sausage ensuring to break up into small pieces (should look like ground beef when cooked). Add onion and celery when sausage is almost cooked and cook until veggies are tender. Add salt, pepper and garlic powder to taste. Stir in cooked rice (I didn't use the seasoning that came with the rice as it adds TONS of sodium and I didn't really like the flavor of it). Mix together well. Divide mixture and stuff the peppers. Garnish with cheese. Put peppers in oven at 350* for appx 15-20 minutes or until peppers begin to soften (don't let them go too far or they'll be mushy) then switch the oven to broil to crisp cheese. Enjoy!

Chicken Fingers

Cut boneless skinless chicken breasts into strips of about the same size to ensure equal cook time
Create a flour dredge (you can use whole wheat or all purpose flour) and mix in any type of seasonings and spices you want (I used garlic powder, salt, pepper and a tiny bit of cayenne to give a little kick) and place in 1 bowl
Beat 1 egg per 2 chicken breasts in a second bowl
In a third bowl mix bread crumbs (again you can use whole wheat, white, or panko) with herbs of your choice (I used parsley)
Keeping 1 had for wet ingredients and 1 for dry ingredients place the chicken in the flour mixture, then the eggs, then into the bread crumbs, ensuring to coat thoroughly
Place on a cookie sheet sprayed with cooking spray
Bake at 400* for 12-15 minutes or until chicken is cooked through


  • Use boneless skinless chicken breasts, cut into small chunks or strips and cook through in EVOO, season lightly with salt and cayenne pepper
  • Place whole wheat tortilla in ungreased non stick skillet over medium high heat
  • Place low fat cheese, chicken and veggies of choice (I like green pepper, green onion, tomato, cilantro, and olives) over 1/2 the tortilla (don't over fill)
  • Fold other half over top of the filling and allow to cook until cheese is melted and tortilla is crisp
  • To flip to crisp the other side, use a spatula to lift the "open" side of the tortilla, hold the edges together with your fingers and "roll" it to the other side, allow to crisp
  • Cut into wedges and serve with salsa and non-fat sour cream
Oven Fries

  • Preheat oven to 450
  • Wash and pat dry 1 medium potato per person and cut into wedges
  • Place wedges in bowl and toss with just enough EVOO to coat
  • Add seasoning &/or spices to preference (salt, pepper, rosemary, thyme, garlic, etc)
  • Arrange wedges on cooling rack over top of a cookie sheet so any excess oil drains off
  • Bake for 30-45 minutes until fries are golden and crispy
